Pizza Dough

This makes a 1lb. thin crust pizza dough in my bread maker

3/4 cup warm water
1 TBSP olive oil
2 1/4 cup all purpose flour
1 tsp. salt
1 tsp. sugar
1 tsp. dry yeast

Add in order given

POOR MOMMA'S PIZZA

sliced bread
spaghetti or pizza sauce
shredded mozzarella cheese

Pre-heat oven to 450. Place bread on baking sheet. Top bread with sauce and spread to edges. Sprinkle with cheese. Bake for 5-10 minutes (it took 6 minutes in my oven). Enjoy :)

**EDITED TO ADD: my kids loved this, they even asked for seconds.

Blackened Chicken Pizza

Recipe courtesy of Rachel Ray

1 tablespoon grill seasoning (recommended: Montreal Grill Seasoning) or other seasoning blend
1 teaspoon sweet paprika – eyeball it
1 teaspoon chili powder
1/2 teaspoon dried cayenne pepper
3/4 pound thin cut chicken breast
1 tablespoon vegetable oil, 1 turn of the pan
All-purpose flour or cornmeal, a couple of tablespoons to work dough
1 pizza dough
1/2 pound brick reduced fat Cheddar with jalapeno or chipotle pepper (recommended: Cabot brand)
2 small yellow tomatoes, seeded and chopped
1/4 cup chopped red onion
1/2 jalapeno pepper, seeded and finely chopped
2 tablespoons cilantro leaves, optional
2 tablespoons thyme leaves
1 clove garlic
Coarse salt
1/2 lime, zested and juiced

Preheat a large heavy skillet over very high heat. Preheat oven to 450 degrees F.
Combine grill seasoning, paprika, chili powder, cayenne pepper on a plate. Press thin cut chicken into seasoning on 1 side. Add oil to screaming hot pan and cook chicken 2 minutes on each side.

Spread out a little flour or cornmeal and stretch out pizza dough onto a pizza pan. Shred reduced fat cheese.

Remove chicken from pan and chop. Combine tomatoes, onion, jalapeno, cilantro and thyme. Make garlic paste by chopping garlic then mashing it with the flat of your knife and a generous pinch of coarse salt. Add paste to salsa. Add zest and juice of 1/2 lime and mix salsa thoroughly. Scatter chicken, salsa and cheese over pizza dough working to the edges of both pies. Bake 12 to 15 minutes, until crisp and bubbly-brown on top.

Chicken and Broccoli Pizza

1 TBSP reduced cal mayo
1 tsp low-fat milk
1/2 lb chicken breasts, cut into 1/2 in strips
1/2 cup cornflakes crumbs
3/4 cup part-skim ricotta
1 pkg thin crust pizza crust
1 pkg frozen chopped broccoli, thawed and patted dry
3 TBSP grated Parm cheese
1/2 cup shreeded part-skim mozzarella

Preheat the oven to 450 degrees. Spray a small baking pan with nonstick spray

Combine the mayo and milk in a medium bowl. Add the chicken, toss to coat.

Place the cornflake crumbs in a large zip-close bag. Add the chicken and shake until coated. Place the chicken in the baking pan in one layer. Bake until the chicken is cooked through and browned, turning once about 10 min.

Meanwhile, spoon the ricotta cheese evenly onto the pizza crust (be pretty generous). Top with the broccoli, parmesan cheese, chicken and mozzarella. (I added zucchini, onion and red pepper as well)

Bake until hot and the cheese is melted and bubbly, about 15 min. Serve at once.

Mexican Meat-zza: Mexican Deep-Dish Pan Pizza

2 boxes corn muffin mix, 8 1/2 ounces each (recommended: Jiffy)
2 eggs
4 tablespoons melted butter
1 1/2 cups milk
1 cup frozen corn kernels
Extra-virgin olive oil or, vegetable oil, for drizzling
Topping:
2 tablespoons extra-virgin or vegetable oil, 2 turns of the pan
1 pound ground beef
1 small onion, finely chopped
1 tablespoon chili powder
2 teaspoons ground cumin
2 teaspoons cayenne sauce
Salt
2 1/2 cups (10-ounce sack from dairy aisle) shredded Cheddar or jack cheese
1/2 red bell pepper, chopped
1 small can, 2 1/4 ounces sliced chillies or jalapenos, drained
2 scallions, chopped
2 small vine ripe tomatoes, seeded and diced
2 tablespoons drained sliced green olives (salad olives)
1 to 2 tablespoons chopped cilantro leaves, optional garnish
Mild to medium taco sauce to pass at table, 1 cup



Preheat oven to 400 degrees F.
Mix together 2 packages muffin mix with 2 eggs, 4 tablespoons melted butter (melt in microwave 30 seconds), 1 1/2 cups milk and frozen corn kernels. Wipe a nonstick skillet with a little extra or vegetable oil and pour in the muffin mix. Use a large skillet, 10 to 12 inch. Choose a pan with oven safe handle or, double-wrap handle with foil to protect it in the oven. Place pan in oven and bake 12 to 15 minutes in center of the oven until light golden in color.

Brown the meat over medium high heat in a second skillet in extra or vegetable oil, 2 turns of the pan. Add onions and spices and cook meat 5 minutes more.

Remove cornbread from oven and top with meat, cheese, and veggies. Add pan back to oven and cook 5 minutes more to melt cheese. Garnish with cilantro, optional. Cut into 8 wedges and serve the deep dish pan pizza from the skillet. Pass taco sauce at the table to sprinkle on top.

Prep Time: 15 minutes
Cook Time: 25 minutes
Yield: 4 servings, 2 slices each of Mexican deep dish pizza pie

California Pizza for One

1 6in pocketless pita
1 plum tomato, chopped
1/3 cup chopped cooked skinless chicken breast
3 TBSP shredded Monterey jack cheese
1/8 avocado, diced
1/4 cup alfalfa sprouts
2 TBSP fat-free sour cream

Preheat the oven to 425 degrees. Set the pita on a baking sheet. Sprinkle with the tomato, chicken and cheese, then bake until the cheese melts and the pita begins to get crisp, about 10 minutes. Sprinkle with the avocado and sprouts and dollop with the sour cream.

8 points total.

Tuscan Pizza Calzones

Total time: 1 hour, 15 min.

5 tbsp. Olive oil (plus more for brushing)
2 1/2 medium green peppers, julienne
2 1/2 medium red pepper, julienne
2 small yellow onions, julienne
1/4 cup fresh basil, roughly chopped
1/4 cup fresh parsley, roughly chopped
2 1/2tsp italion seasoning
salt and pepper, to taste
3 (13oz rolls) pizza crust dough
as needed all purpose flour
1 1/4 cups pizza sauce (plus more for dipping)
2 1/2 cups mozzarella cheese, shredded
8 oz. sliced pepperoni
As needed cooking spray
fresh parsley for garnish
grated parmesan cheese for garnish

1. Preheat oven to 400 degrees
2. Heat oil in a medium saute pan over medium-high heat. Add peppers and onions, and cook, stirring frequently, 3-4 minutes
3. Stir in basil, parsley, italian seasoning and salt and pepper to taste; remove from heat and let cool.
4. Divide dough into five equal size pieces, and roll each into a ball.
5. Roll one pizza dough ball into a 10" circle, dusting with flour as necessary to prevent sticking. Spread 1/4 cup of pizza sauce onto center of dough, leaving a 1" border.
6. Sprinkle 1/4 cup of cheese over pizza sauce.
7. Place about 10 slices of pepperoni over cheese and top with 1/5 of the pepper-onion mixture.
8. Sprinkle 1/4 cup of cheese over pepper-onion mix and place 10 more slices of pepperoni over cheese.
9. Lightly wett entire border of pizza dough with water and fold over to form a half moon. Crimp edges of pizza dough with fork.
10. Spray a baking sheet with olive oil.
11. Repeat with remaining dough and fillings.
12. Bake calzones approximately 40 min or until the outsides are lightly browned.
13. Remove from oven; sprinkle top of each calzone with parsley and parmesan cheese, if desired and let cool for 5-10 min. Cut each calzone in half and serve with pizza sauch for dipping.
Makes approx 8-10 servings

Jul's note

I was only making this for 3 people so I significantly reduced the size of the recipe. I only used one pizza dough, cut it into 1/4 and went from there. Because they were smaller and thinner crust they only took about 25 minutes to cook.

It was SO yummy!
