1 cup crushed strawberries
3/4 cup water
red food coloring
simmer for 5 minutes
mix together 1 cup sugar and 4T cornstarch. When mixed, stir into top mixture and boil one minute, stirring constantly.
Take off heat and add 1T lemon juice. Cool and then pour a little in bottom pie crust, add sliced fresh strawberries to fill up pie tin. Pour remaining sauce on top. Chill.

YUM YUM YUM... this is my sister-in-law's husbands grandma's pie recipe, did you get all that? It's just plain yummy. I only had like a drop of food coloring in the pantry so the pie was a little light pink, but I don't really care so I don't think that it's really necessary. While there I asked "Do you use a store bought crust?" to which my brother-in-law replied "No we make it, do you need a recipe? I have a good one and it's super easy" I thought okay, if my brother-in-law can make pie crust so can I... so read on for that recipe.

Flaky Pie Crust
12 1/2 cups flour
5 cups shortening (this is almost a whole jar, so be prepared!)
2T salt
Cut the above until it looks like corn meal. Divide into 6 zip lock bags (about 2 1/2 cups each)
Pop in the freezer until ready to use.
When ready to finish: for each pie crust- mix 1/4 cup ice water, 1 egg beaten and 1T white vinegar.
Toss with a fork until the dough barely clings together in the bowl. Roll out between 2 sheets of waxed paper. May need a lttle flour on the the surface to keep from sticking.
Place dough on a 9" pie tin. Press gently into place after letting dough rest for a few minutes. Don't stretch it or it will shrink while cooking.
If making single crust to be filled after cooking, poke holes around it with a fork, then bake 400 degrees for 10-14 min or until lite golden brown.
One recipe will make 2 9" one crust pies.
If making filling to cook with crust, don't prick with fork. Roll second dough out and carefully lay on top of filling. Pinch the edges together, best if moisten under layer with a little water, will stick together better. Bake about 45 min @ 400 degrees or until golder brown. Bake on lower rack and make slits in top crust to let out steam.

I like this concept- because now when I want to make a pie crust most of the work is done for me! (Although when I buy pillsbury all the works done for me, but anyway...) And it was a really good crust.

Tuscan Pizza Calzones
Total time: 1 hour, 15 min.
5 tbsp. Olive oil (plus more for brushing)
2 1/2 medium green peppers, julienne
2 1/2 medium red pepper, julienne
2 small yellow onions, julienne
1/4 cup fresh basil, roughly chopped
1/4 cup fresh parsley, roughly chopped
2 1/2tsp italion seasoning
salt and pepper, to taste
3 (13oz rolls) pizza crust dough
as needed all purpose flour
1 1/4 cups pizza sauce (plus more for dipping)
2 1/2 cups mozzarella cheese, shredded
8 oz. sliced pepperoni
As needed cooking spray
fresh parsley for garnish
grated parmesan cheese for garnish
1. Preheat oven to 400 degrees
2. Heat oil in a medium saute pan over medium-high heat. Add peppers and onions, and cook, stirring frequently, 3-4 minutes
3. Stir in basil, parsley, italian seasoning and salt and pepper to taste; remove from heat and let cool.
4. Divide dough into five equal size pieces, and roll each into a ball.
5. Roll one pizza dough ball into a 10" circle, dusting with flour as necessary to prevent sticking. Spread 1/4 cup of pizza sauce onto center of dough, leaving a 1" border.
6. Sprinkle 1/4 cup of cheese over pizza sauce.
7. Place about 10 slices of pepperoni over cheese and top with 1/5 of the pepper-onion mixture.
8. Sprinkle 1/4 cup of cheese over pepper-onion mix and place 10 more slices of pepperoni over cheese.
9. Lightly wett entire border of pizza dough with water and fold over to form a half moon. Crimp edges of pizza dough with fork.
10. Spray a baking sheet with olive oil.
11. Repeat with remaining dough and fillings.
12. Bake calzones approximately 40 min or until the outsides are lightly browned.
13. Remove from oven; sprinkle top of each calzone with parsley and parmesan cheese, if desired and let cool for 5-10 min. Cut each calzone in half and serve with pizza sauch for dipping.
Makes approx 8-10 servings

I was only making this for 3 people so I significantly reduced the size of the recipe. I only used one pizza dough, cut it into 1/4 and went from there. Because they were smaller and thinner crust they only took about 25 minutes to cook.
It was SO yummy!
